Why we love it: Opened in 2021, Paragon 700 is the brainchild of designers Pascale Lauber and Ulrike Bauschke, who took this decaying 16th-century palazzo (it had sat empty for four decades) and transformed it into one of Ostuni’s most stylish boutique hotels. With a large swimming pool, numerous sunbathing and dining areas, a gym, Jacuzzi and pizza oven, it’s ideal for hosting, and the housekeeper can organise a private chef as well as cultural tours of the area. With a daily maid service, too, it’s all too easy to get very used to life at Masseria Gemmabella…

Why we love it: This contemporary four-star hotel in Gallipoli has oodles of personality and a very budget-friendly price tag. Located a few steps from the Spiaggia della Purita and all of Gallipoli’s cultural attractions such as the Sant’Agata Cathedral and Castello di Gallipoli, it’s a fab base to explore and fall in love with the Apulian way of life.
